Consoles or desktops? Console-wise I recommend Soul Calibur IV (PS3 & Xbox) and desktop-wise I recommend Silmar: http://dunjax.com/ It's not current gen by any means, but it's an awesome game! I even asked Jeff Mather (the guy who made the game) to review Quest of Magic and he gave me some great pointers on game design.

Fallout 3, you can play it for ever. Get the GOTY edition for ps3. (comes with all expansion packs)

FALLOUT 3! Get it for PC so you can use mods, it really does last forever.

Civilization III for PC.  Civilization IV is more recent but I didn't like it as much.

I don't have any type of console whatsoever so I can't help you with that.   :P

Civ II rocks. :D I love accusing America of being money hungry swindlers and then sucking up to them whenever I'm at war with someone else. ;D (usually Germany or Russia)

Definitely Fallout 3 and Bioshock. Orange Box (Half-life 2, Team Fortress 2, Portal). The new Army of Two seems pretty good from the demo (the first one was okay, not great). Uncharted 2 (if you have a PS3). There's more but I'm drawing blank right now.

RPGs are going that way as well. Such a shame, since it's the most versatile genre.

I suggest the Atelier Iris series.

Oblivion is by far the best non-shooting RPG.
